A Taste of India: Step-by-Step Guide to Chicken Tikka Masala

– 1 lb boneless, skinless chicken breast, cut into bite-sized pieces
– 1 cup plain Greek yogurt

– 2 tbsp lemon juice
– 2 tsp ground cumin
– 2 tsp paprika
– 1 tsp ground cinnamon
– 1 tsp salt
– 1 tsp freshly ground black pepper
– 2 tbsp unsalted butter
– 1 large onion, diced
– 4 garlic cloves, minced
– 2 tbsp grated fresh ginger
– 2 tsp ground coriander
– 1 tsp ground cumin
– 1 tsp paprika
– 1 tsp garam masala
– 1 can (14.5 oz) crushed tomatoes
– 1 cup heavy cream
– Fresh cilantro, chopped, for garnish
– Cooked basmati rice, for serving

Instructions:

1. In a large bowl, combine the chicken, yogurt, lemon juice, cumin, paprika, cinnamon, salt, and pepper. Mix well and allow to marinate in the fridge for at least 30 minutes, or up to 12 hours.

2. Preheat a grill or grill pan to high heat. Thread the chicken onto skewers and grill for 5-7 minutes per side, or until cooked through. Remove from the grill and set aside.

3. In a large skillet, melt the butter over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and ginger and cook for another 2 minutes. Add the coriander, cumin, paprika, and garam masala and cook for 1-2 minutes, until fragrant.

4. Add the crushed tomatoes and bring the mixture to a simmer. Cook for 10-15 minutes, until the sauce has thickened slightly.

5. Add the grilled chicken to the skillet and stir to coat in the sauce. Add the heavy cream and stir to combine. Simmer for another 5 minutes, until the sauce has thickened and the chicken is heated through.

6. Serve the chicken tikka masala over cooked basmati rice and garnish with fresh cilantro.
