Homemade Chicken Pot Roast: Tender Meat and Vegetables

Hey there, foodies! Today, I want to share with you one of my all-time favorite recipes – Homemade Chicken Pot Roast. This dish is perfect for those cold winter nights when you want something hearty and comforting.

The first thing you need to do is gather your ingredients. You will need a whole chicken, potatoes, carrots, onions, garlic, chicken broth, and some seasonings. I like to use rosemary, thyme, and bay leaves, but you can use whatever spices you prefer.

Next, preheat your oven to 350 degrees Fahrenheit. While the oven is heating up, wash and peel your vegetables. Cut them into bite-sized pieces and set them aside. Peel the garlic and chop it finely.

Now it’s time to prepare the chicken. Remove any giblets and rinse the chicken under cold water. Pat it dry with paper towels and season it generously with salt and pepper.

Place the chicken in a large roasting pan and scatter the vegetables around it. Sprinkle the garlic over everything, then pour in enough chicken broth to cover the bottom of the pan. Add your seasonings and stir everything together.

Cover the roasting pan tightly with foil and place it in the oven. Roast the chicken for about 2 hours, or until the meat is tender and falling off the bone.

When the chicken is cooked, remove it from the pan and let it rest for a few minutes. Use a slotted spoon to remove the vegetables from the pan and place them in a serving dish.

Now it’s time to make the gravy. Pour the juices from the roasting pan into a saucepan and bring it to a boil. In a small bowl, whisk together some flour and water until it forms a smooth paste. Gradually whisk the paste into the boiling juices, stirring constantly. Cook the gravy for a few minutes, or until it thickens to your desired consistency.

Carve the chicken into pieces and serve it with the vegetables and gravy. This dish is so delicious and comforting, and it’s perfect for feeding a crowd. I hope you enjoy it as much as I do!
